Beerenauslese

A German term that translates as “hand selected” and refers to wine made from individually selected grapes. The grapes selected are typically infected with Botrytis cinerea, a “noble rot” that shrivels the grapes, concentrating the flavors and the sugar. Beerenauslese wines have residual sugar levels between 26% and 30%.
