Botrytis Cinerea

Also known as “noble rot”, Botrytis cinerea is the fungus that attacks grapes reducing their water content and concentrating their sugar and flavors. Grapes infested with Botrytis cinerea are prized for their abilities to make intensely flavored, long-lived wines.
