Cabernet

A slang term that refers to Cabernet Sauvignon.

Cabernet Franc

A French grape varietal that is similar in flavor and structure to Cabernet Sauvignon, but without the body or intensity. Cabernet Franc is one of the five grapes that may be blended to make Bordeaux wines.

A winemaking term that refers to the solids that float to the top of the fermentation vessel during primary fermentation.

Capsule

The wrapping that covers the bottle closure and the top of the wine bottle. Historically, the capsule was made of lead, but because of the health concerns the lead has been replaced by plastic, tin, aluminum, or composites.

Carafe

A glass container with a wide mouth for serving wine.

Carbonic Maceration

Winemaking technique that uses whole, uncrushed grapes or bunches of grapes. This technique is used in Beaujolais to make light red wines.

Carboy

A large vessel with a narrow neck used for secondary fermentation.

Cask

A large leak-proof vessel for storing wine. Casks are often made of oak.

Cava

The name applied to sparkling wine produced in various designated regions in Spain. The name is the result of legal dispute between France and Spain on the use of the word Champana, the Spanish translation for Champagne.
