Phenolic Compounds

Complex organic material including tannin and color pigments that are present in grape skins, seeds, and stems. Phenolic compounds can also be extracted from oak if wine is stored or fermented in oak barrels.

pH

A measurement of the acid concentration in wine. Specifically, the pH is a measure of the concentration of the hydrogen ion in solution. It is a negative logarithmic scale, so the smaller the number the higher the concentration. As an example, the pH of a typical California Chardonnay would be about 3.6.

Phylloxera

An aphid like bug that attacks the root stock of grape vines, particularly Vitis Vinifera (European grape vines). The aphid was responsible for the near total destruction of European wine vines in the early part of the twentieth century.

The name for a grape seed.

A term for inexpensive wine.

Pomace

The grape skins, pips, and stems that are left over after winemaking. Pomace is another name for marc.

Port

The name for generic sweet, fortified wine. If the wine is from Portugal, the wine is called a Porto.

Porto

The name the US used to denote fortified wines that are made in the Douro River region of Portugal. Distilled spirits are added to the wine to stop the fermentation and preserve the wine.

An organic chemical that is used as a wine preservative.

Prädikatswein

German wine designation that replaced Qualitätswein mit Prädikat in 2007. Prädikatswein are Germany’s top wine regulations.
