Toast

(1) The name for the char on the inside of the barrel. The degree of charring varies from a light brown to a dark black.
(2) The name of a good wish that precedes a celebratory drink.

Total Acid

A winemaking term that refers to all the acid in the wine as if it were tartaric. A California Chardonnay will have a TA of about 0.6 grams per 100 mL.
