pH

A measurement of the acid concentration in wine. Specifically, the pH is a measure of the concentration of the hydrogen ion in solution. It is a negative logarithmic scale, so the smaller the number the higher the concentration. As an example, the pH of a typical California Chardonnay would be about 3.6.
