Sulfites

Sulfur salts, typically potassium metabisulfite or sodium metabisulfite, that are added to wine. The metabisulfite reacts with the acids present in the wine to generate sulfur dioxide, for which SO2 is the molecular formula. SO2 acts as an antimicrobial agent and an antioxidant.
