Sulfur Dioxide (SO2)

An inorganic gas used in the production of wine, with the chemical formula SO2, which means it is a molecule with one sulfur and two oxygen atoms. SO2 is used after harvesting the grapes to prevent fungus and mold from infecting the grapes or must. SO2 is also added to wine during bottling to protect the wine from microbial growth and oxidation.
